Festival Sabor Aims to Teach Audiences About Sustainability
Festival Sabor aims to make its audiences aware of how we manage waste, eat responsibly and engage in sustainable fishing. In fact, every venue will set different prices for their different course dinners. The hotels will donate all earnings to different causes. For example, Hotel Xcaret will donate its earnings to Pesca con Futuro, which is working hard to bring sustainable dinners to their tables and really makes the diners reflect. Where does their food come from? Did the restaurant pay the fishermen fairly? Were the fishing closed seasons respected? The idea is to take sustainability from the thought of eating all the way to the table.
All the Flavors of Quintana Roo
However, one of the most interesting things about the festival is that all culinary experiences will be based off a local produce basket to showcase Quintana Roo’s flavors. The produce basket will include common local fruits and vegetables such as white cucumber and nance fruit. Diners will also taste some unique plants such as flor de sal (salt flower). This algae is only found within Quintana Roo’s Soliman Bay. Chefs described it as being both sweet and salty.
Chefs such as Pedro Abascal, Dani Manzano, Rodrigo Carrasco, Eva Millán, and many others, will surprise diners with national and local-inspired dishes. In partnership with Comepesca, Razonatura, Slow Food Mexico, Slow Fish Caribe, Sustentur and La Escena Inminente, the festival will encourage diners to bring these same products to their home tables.
These type of efforts to highlight the Riviera Maya as more than just a pretty destination will help continue the rise of tourism.
